With XCOM last year and AOE 2 HD in a week... what else do you want to see?
http://www.gog.com/ seems to be our best hope for re-release of the classics.
Top of my list would have to be Tie Fighter. I love Star Wars and was astonished by how well this game flipped your ideas about the SW universe on their head by changing your perspective to the other side. It provided an utterly convincing portrayal of the Empire as the good guys under attack by terrorist rebels. There were some brilliant moments in the plot, the most memorable of which to me is when you're convinced to demonstrate to some rookies how to clear a minefield in an unshielded ship. It turns out you've been set up and the star destroyer is rebelling and the 'rookies' plan to kill you if the mines don't. So you call for reinforcements and an Empire star destroyer turns up and there you are, sat in an unshielded Tie Fighter, between 2 star destroyers battering the heck out of each other!
The actual gameplay was fantastic - not just a point and shoot arcade game like all recent attempts at space combat games. Your engines could output a certain amount of power and you had to balance it between weapon power, shield regen and engine speed. And in an emergency you could dump power from one sub system to another.

I would love to see Planescape: Torment with full voice acting and modern graphics.

For me it would be Star Trek Birth of The Federation, I loved this game so much when it was out. Having said that I would love a remake of Final Fantasy 7 or Shenmue with modern graphics.

I just read about Lucasarts closing down, I wonder if it will mean that other games companies will be able to acquire the rights to Star Wars games?
Knights of the Old Republic was amazing and something like Mass Effect set in the Star Wars universe would be huge I think.

I was a fan of Star Quest. Star Quest was a space RTS game. I am waiting for its second version. The good news is the second version Star Quest 2 is on the way. This one in under development. I found them in Kickstarter.
