BIOS in my ASUS Z97-P motherboard won't let me set the boot drive order.
I keep having to select the MX500 SSD from a list on another page in the BIOS everytime I reboot.

Are you booting with UEFI or Legacy MBR? Are all the bootable drives using the same boot method?
If your motherboard provides an option to save its configuration, please do so in case something we try makes your system unbootable. Can you clear out the existing boot options, save & exit, then reboot back into the BIOS to configure boot order as desired? If not, then reset the BIOS to defaults, then save & exit, reboot to BIOS and set the boot order. If this doesn't work, try clearing the RTC as described in section 1.6 of the User Guide for your motherboard.
Worst case scenario if you cannot get your motherboard to customize the boot order, you could create custom boot entries for your other drives on the current default boot drive.
